Chocolate beef goulash Hagen style

Ingredients for 4 servings:

  • 500 g beef goulash
  • 3 tbsp oil
  • 1 tsp thyme
  • 1 tsp curry powder
  • 1 tsp salt
  • 3 tbsp sugar
  • 5 onions
  • 2 garlic cloves
  • 1 tbsp sweet paprika powder (or a little hot if you like)
  • 1 tbsp tomato paste
  • 600 ml broth
  • 250 ml red wine (alternatively white wine)
  • 25 g dark chocolate, 70% cocoa content
  • 3 tbsp cherry jam
  • 3 carnations
  • ½ bay leaf
  • 3 tbsp fresh mixed herbs
  • some water or broth

Working time approx. 25 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 25 minutes

sweet beef goulash with cocoa flavor

Brown the beef goulash over high heat in 1 tablespoon of heated oil with thyme, curry powder, salt, and sugar. Peel and dice the onions and garlic cloves and sauté them in a pan with a little heated oil until translucent. Season with paprika and sauté briefly again. Then add the onions to the meat and the tomato paste. Deglaze with the stock and red or white wine. Then add the cloves, bay leaf, dark chocolate, and cherry jam (to taste) and simmer for about 100 minutes. If necessary, top up with a little liquid (water or stock) frequently. Arrange on plates and serve sprinkled with the herbs. Serve with potato fritters with cranberry cream and leaf salad in a cream dressing.
