Chocolate-cherry muffins

Ingredients for 1 servings:

  • 1 jar of sour cherries (720 g each)
  • 80 g milk chocolate
  • 180 g butter
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 4 eggs
  • 230 g flour
  • 75 g cornstarch
  • 1 tsp baking powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Makes 15: Drain the cherries and let them drain well in a sieve. Roughly chop the chocolate. Cream the butter with the sugar, vanilla sugar, and salt until fluffy. Beat in the eggs, one at a time. Sift the flour, mix with the cornstarch and baking powder, and fold into the batter. Carefully fold the drained cherries and the chocolate into the batter. Place a paper baking cup into each hole in the muffin tin. Fill each filled hole with a heaped tablespoon of the chocolate-cherry batter. Bake in an oven preheated to 175°C (convection oven) for 25-30 minutes.
