Chocolate coconut cookies

Ingredients for 1 servings:

  • 230 g butter or margarine
  • 180 g sugar
  • 180 g brown sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 1 egg(s)
  • 250 g flour
  • 1 tsp baking powder
  • 200 g desiccated coconut
  • 150 g chocolate, whole milk, coarsely chopped
  • 150 g dark chocolate, coarsely chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 48 minutes

Cream the butter with sugar, brown sugar, vanilla sugar, and salt until fluffy. Beat in the egg. Combine the flour with the baking powder and gradually stir in. Fold in the desiccated coconut first, then the chocolate. Form small portions (about a tablespoon in size) of the dough onto a baking sheet lined with parchment paper. The dough is crumbly and won’t hold together on its own. It will rise in the oven and “combine” itself. Therefore, the portions must be spaced apart on the baking sheet. Bake the cookies at 175°C until golden brown. They are done when they can be easily removed from the parchment paper (after about 18 minutes). Transfer to a wire rack or large plate to cool. This will allow the cookies to firm up.
