Ingredients for 1 servings:

  • 125 g margarine
  • 100 g sugar
  • 1 tsp, heaped vanilla sugar
  • 1 pinch of salt
  • 3 tbsp espresso, cold
  • 200 g flour
  • ½ tsp, stripped ammonium bicarbonate
  • 1 tbsp cocoa powder
  • 50 g granulated sugar
  • 1 tbsp powdered sugar

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 47 minutes

Christmas cookies with espresso

Combine margarine, sugar, vanilla sugar, and salt. Stir in the espresso. Mix the flour, baking powder, and cocoa powder and gradually incorporate. Preheat the oven to 180°C (160°C fan-assisted oven). Form the dough into walnut-sized balls and place them on the baking paper, about 6 cm apart. Flatten the balls and sprinkle with sugar. Bake the cookies for 9-12 minutes. Let the cookies cool and dust with powdered sugar.
