Ingredients for 1 servings:
- 16 Oreo cookies
- 55 g butter, melted
- 150 g mascarpone
- 50 g Greek yogurt
- 2 tbsp sugar
- 2 tbsp vanilla sugar
- 2 tbsp lemon juice
- 500 g strawberries
- ½ pack of cake glaze
- 65 g currant jelly or raspberry jelly
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 10 minutes
Crush the biscuits and mix with melted butter to form a firm dough. Press into a 20 cm round cake tin and chill for about 1/2 hour. Mix the mascarpone, yogurt, sugar, vanilla sugar, and lemon juice and spread over the biscuit base. Top with the washed and dried strawberries. Mix the cake glaze with 65 ml of cold water and the redcurrant jelly, bring to a boil, and spread over the fruit. Chill for another hour.
