Chocolate cookies with caramel center

Ingredients for 1 servings:

  • 100 g dark chocolate
  • 80 g butter
  • 1 egg(s)
  • 150 g brown sugar
  • 130 g flour
  • 1 tsp baking powder
  • 1 tbsp cocoa powder
  • 20 pieces of confectionery (Rolo)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

ATTENTION: Danger of addiction!!!

Melt the chocolate in a double boiler and let it cool slightly. Melt the butter and let it cool slightly. Beat the egg, sugar and butter with an electric mixer until creamy. Stir in the flour, baking powder, cocoa powder and chocolate. Chill the dough for about 15 minutes. Scoop out about 1.5 teaspoons of dough from each cookie and flatten. Place a roll on each cookie and cover with the dough, forming balls (the dough must enclose the roll!). Chill the dough balls for 30 minutes. Place the balls 3 cm apart on a baking sheet and bake for 15-20 minutes at 160°C fan-assisted oven or 180°C conventional oven. After this time, the cookies will still be soft, but will firm up once they have cooled on the baking sheet.
