Ingredients for 4 servings:

  • 3 eggs
  • 100 ml milk
  • 100 g sugar, fine
  • 40 ml syrup (chocolate syrup)
  • 125 g mascarpone
  • 75 g crème fraîche
  • 1 cup of sweet cream

Beat the eggs, milk, and sugar in a bowl over a double boiler or in a round saucepan directly on the stove over medium heat, stirring constantly and thoroughly until creamy. Be careful not to overheat the mixture, or the egg will curdle! Cool the cream over a cold boiler while stirring continuously, then stir in the mascarpone and crème fraîche. Combine the cream with the chocolate syrup (recipe can be found in the recipe database) and whip until stiff peaks form. Then add to the cream and mix thoroughly. Chill in the refrigerator for a few hours, then freeze in an ice cream maker.
