Chocolate meringues

Ingredients for 1 servings:

  • 1 egg white
  • 1 pinch of salt
  • 80 g powdered sugar, sifted
  • ¼ tsp cream of tartar baking powder, sifted
  • 3 tsp cocoa powder, sifted

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 2 hours 45 minutes

as decoration for cakes or simply for snacking

Preheat the oven to 80°C (top/bottom heat) and line a baking tray with baking paper. Beat the egg whites with a pinch of salt in a grease-free bowl. When stiff peaks form, add the sifted icing sugar, stirring constantly, and continue beating for a few minutes. Finally, mix in the cream of tartar baking powder with a mixer. Add the cocoa powder and fold in with a spatula. Drop teaspoonfuls onto the baking tray or pipe onto the tray using a piping bag, leaving some space (one tray is actually enough). Place the meringues in the oven and wedge a wooden spoon in the door to prevent it from closing completely and allow the moisture to escape. Leave the meringues to dry in the oven for 2.5 hours (for small meringue dots). Allow to cool in the oven, then use, eat, or store in a tightly sealed container.
