Strawberry-kiwi-banana jam

Ingredients for 4 servings:

  • 500 g strawberries, fresh or frozen
  • 500 g kiwifruit
  • 500 g banana(s)
  • 3 tbsp lemon juice, freshly squeezed
  • n. B. Mint leaves, fresh
  • 2 vanilla pods, the pulp
  • 1 package of gelling sugar, 3:1

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 4 minutes; Total time approx. 12 hours 34 minutes

Chop the fruit into small pieces and then puree with a hand blender until the desired consistency is reached (I always like a few pieces of fruit in there). Add the lemon juice, finely chopped mint, and vanilla bean seeds. Place the fruit mixture in a large saucepan and bring to a gentle simmer. Add the preserving sugar and bring to a rolling boil for 4 minutes, stirring continuously. Disinfect the jam jars in hot water, then immediately ladle the jam into the jars to the brim. Close the lids tightly and turn upside down. Once cooled, the jars can be decorated.
