Chocolate nut bites on speculatius base

Ingredients for 1 servings:

  • 300 g nuts, mixed
  • 300 g biscuits (spiced speculatius or butter biscuits)
  • 175 g butter
  • 500 g dark chocolate
  • 350 ml cream
  • Oil for the mold

Instructions

Working time approx. 1 hour; Rest time approx. 12 hours; Total time approx. 13 hours

High in calories, addictive, also works with butter biscuits (for the rest of the year)

Roast the nut mixture in a dry pan until fragrant. Let it cool and chop coarsely. Finely crumble the speculatius biscuits. Melt 150g butter and let it cool slightly. Then mix the butter and speculatius biscuits well and press them firmly into a lightly oiled baking dish (approx. 20 x 20 cm). Chill the dish. Roughly chop the dark chocolate. Gently heat 25g butter and 350ml cream in a large saucepan (do not boil) and melt the chocolate in it. Stir in the nuts, remove the dish from the refrigerator, and spread the chocolate and nut mixture evenly over the speculatius biscuit base. Chill again – ideally overnight. Turn the whole thing out onto a board. If it doesn’t come out of the dish easily, run a tea towel under hot water, squeeze out some of the excess liquid, and place it on the base of the dish. Cut everything into more or less small cubes. Size according to taste. Best stored in the refrigerator.
