Chocolate pancakes with orange sauce

Ingredients for 4 servings:

  • 100 g flour
  • 2 tbsp cocoa powder
  • 2 eggs
  • 50 g dark chocolate
  • 200 ml milk
  • 2 tbsp orange juice
  • Clarified butter
  • 2 large oranges
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • 150 g crème fraîche
  • Cointreau

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Heat the chocolate together with the milk until the chocolate has melted. Allow to cool slightly. Mix the flour, cocoa, and eggs into a batter and stir the chocolate milk into the batter. Add the orange juice and cook small pancakes in a pan with a little clarified butter. For the sauce, grate the zest of an orange, peel the oranges (so that the white pith is completely removed), and slice them. Heat the butter and sugar until the sugar dissolves, then stir in the crème fraîche. Heat the orange slices in the sauce and serve with the pancakes. Drizzle with a little Cointreau, if desired, and garnish with chocolate shavings. You can prepare the batter in the afternoon and bake the cakes in the evening, warming the orange slices in the hot sauce. Tip: Orange segments also taste very good in the sauce instead of orange slices.
