Chocolate pudding with cauliflower

Ingredients for 4 servings:

  • 400 g cauliflower
  • 10 pitted dates
  • 1 tbsp agave syrup
  • 1 tbsp flaxseed
  • 3 tbsp cocoa powder, unsweetened
  • 150 ml plant milk (plant drink) e.g. soy, almond or rice milk, unsweetened
  • n. B. Nuts
  • e.g. banana(s)
  • e.g. goji berries
  • n. B. Desiccated coconut

Instructions

Working time approx. 5 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 25 minutes

Cook the cauliflower for 15-20 minutes until tender, and soak the dates in water if desired. Meanwhile, measure the other ingredients and blend briefly with a hand blender, Thermomix, or in a food processor. Add the cauliflower and dates and blend until smooth. Transfer to a glass or bowl and let cool. Garnish with nuts, banana and/or date slices, berries, or desiccated coconut.
