Chocolate sorbet

Ingredients for 6 servings:

  • ½ liter of water
  • 3 tbsp honey, liquid
  • 120 g sugar
  • 75 g cocoa powder
  • 50 g dark chocolate, broken into pieces
  • 400 g berries, red (e.g. raspberries, currants or strawberries)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the water, honey, sugar, and cocoa powder in a saucepan and heat gently, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat, add the chocolate pieces, and stir until the pieces have melted. Allow to cool. Pour the mixture into an ice cream maker and freeze with the motor running (or freeze in the freezer) until ice crystals form. Remove from the freezer and stir until smooth, then freeze again. Repeat the process one more time and allow to freeze until finished. Remove the sorbet from the freezer about 10 minutes before serving, portion it out, and serve with the red berries.
