Ingredients for 4 servings:

  • 200 g dark chocolate
  • 150 g sugar
  • 50 g flour
  • 150 g butter or margarine, salted
  • 4 eggs
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 50 minutes

This recipe comes from a baking book my sister brought me during a year-long exchange in France. It’s actually called “Gâteau tout simple au chocolat amer.”

Preheat the oven to 180°C (fan-assisted). Melt the chocolate in a double boiler. Separate the eggs. Season the egg whites with a pinch of salt and beat until stiff peaks form. Cream the butter and sugar until fluffy, then add the chocolate, egg yolks, and flour. Gently fold in the egg whites. Pour the batter into a pan and reduce the oven temperature to 150°C. Bake for 30 minutes. Remove the finished cake from the pan only when it is lukewarm. This is the easiest time to remove it.
