Chopped bean stew with Mettwurst

Ingredients for 4 servings:

  • 2 jars of green beans (chopped beans)
  • 6 Mettwurst or smoked sausages
  • some flour
  • extra butter
  • salt and pepper
  • Nutmeg, freshly grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Drain the beans and collect the water. Pierce the Mettwurst or smoked sausages a few times with a fork and place them in boiling water for 5-10 minutes. Then remove the sausages, pierce them again, and boil for another 5-10 minutes. Remove the sausages from the water and slice them. Save the water as well. Make a roux from the butter and flour and deglaze with the sausage and bean water until the desired consistency is reached. Now add the beans and sausage slices to the sauce and season with salt, pepper, and nutmeg. If it is too thick, you can add more sausage or bean water. Tastes delicious on its own if it is a little thicker, or alternatively with boiled potatoes.
