Hearty lentil soup

Spread the love

Ingredients for 2 servings:

  • 5 m.-sized potatoes
  • 3 sausages (Wiener)
  • 1 gr. can/n lentils, with soup vegetables
  • 1 pack of soup vegetables, frozen
  • 1 onion(s)
  • 1 pack of bacon
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

According to my mother’s recipe

Peel the potatoes and dice them. Bring to a boil, barely covered with water. While the potatoes are cooking, dice the onion and fry them in a pan with the bacon, cut into crosswise strips, then set aside. When the potatoes are tender, add the soup vegetables, stir briefly, and then add the lentils. Then add the onion and bacon mixture and mix everything well. Finally, add the sliced wiener sausages and heat through. Season with salt and pepper. I have a very big eater at home, so this recipe serves two people. If there are any leftovers, it tastes even better the next day.
