Chops with apples in mustard sauce

Ingredients for 4 servings:

  • 4 pork chops
  • 6 apples
  • 20 g butter
  • 20 ml vegetable oil
  • salt and pepper
  • 50 ml dry white wine
  • 350 ml sweet cream
  • 4 tbsp mustard, hot

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Cotes de Porc aux French fries à la Moutarde

Use a baking dish large enough to hold all the cutlets side by side. Brush with butter. Peel the apples, quarter them, remove the cores, and slice them. Line the baking dish with apple slices. The six apples should be enough for two to three layers. Bake in an oven preheated to 200°C (400°F) for 15 minutes. Season the cutlets with salt and pepper. Brown them vigorously on both sides in butter and vegetable oil for two to three minutes. Place the cutlets on the apple slices. Drain the cooking fat, deglaze with white wine, loosen the cooking juices, and reduce by half. Mix the mustard with the cream, season with salt and pepper, mix with the reduced cooking juices, and pour everything over the cutlets. Make sure the sauce also runs through to the apples. Continue baking in the oven for another 20 minutes at 200°C (400°F).
