Ingredients for 1 servings:

  • 1 mango(s), approx. 200 g
  • 2 bell peppers, red, roasted and peeled (possibly from the jar)
  • 1 piri-piri or ½ red pepper
  • 1 tbsp rapeseed oil
  • 1 tsp honey
  • 1 dashes soy sauce, Japanese (Terijaki)
  • Paprika powder, sweet
  • Salt and pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the mango and chop into large pieces. Place it in a tall mixing bowl along with the roughly chopped bell peppers, the deseeded piri piri, the rapeseed oil, the honey, and the teriyaki sauce and blend thoroughly with a hand blender. Season to taste with paprika, salt, and freshly ground pepper. Total: 5 points, or 0.5 points per serving for 10 servings. The sauce tastes best when left to marinate overnight. It goes excellently with all types of poultry (see my chicken nugget recipe), but also with grilled prawns, etc. It also makes a great base for fruity salad dressings. It will keep in a screw-top jar in the refrigerator for about a week.
