Christkindler Noodles from Christmas Roast
The perfect christkindler noodles from christmas roast recipe with a picture and simple step-by-step instructions.
For the pasta dough
- 1 bunch Herbs
- Roasted onions
- Garlic
- Melted butter
- 500 g Flour
- 6 Pc. Free range eggs
- 4 tbsp Extra virgin olive oil
- Salt
“Gerichte-Geschichte”
- Who does not know it? Refrigerators filled with leftovers from Christmas dinner and nobody knows where to put them. We therefore recommend our dumplings, which are traditionally filled with hash (finely seasoned and minced) from the Christmas roast and co.
The dough
- Mix all ingredients together well.
- Using a food processor, knead into a smooth dough with the kneading dough.
- Wrap in cling film and let it rest for about 30 minutes.
- Roll out the dough evenly and thinly on a floured work surface and sprinkle with flour over and over again.
The hash
- Process the leftovers from the Sunday and / or Christmas roast, ham, roast chicken, etc. together with fresh herbs (I use chives, parsley, chervil) into hash.
- Thoroughly mix and knead the hash mixture again.
tip
- Refine the hash with roasted golden onions and a little garlic. Note that Christmas roasts and the like are richly seasoned on their own.
The pasta
- Cut out the rolled out dough with a ring (possibly a glass) with a diameter of approx. 8 cm.
- Shape the hash into small dumplings, place on the dough and fold it in.
- Press or curl the edges with a fork.
- Bring the salted water to the boil, turn down the heat a little and cook the pasta in it for about 5 minutes.
- Finally toss in a little melted butter and serve.
Serving suggestion
- Tastes best with sauerkraut, goulash juice and small potatoes.
