Christmas applesauce

Ingredients for 1 servings:

  • 1 kg apples, sour, already peeled and pitted
  • 1 tbsp sugar, heaped
  • 100 ml apple juice
  • 4 cloves, whole
  • 1 tsp cinnamon
  • 50 ml Amaretto, (more to taste)
  • 20 ml lemon juice (more to taste)

Working time approx. 15 minutes; Total time approx. 15 minutes

pure or as a filling/topping for waffles, croissants, crêpes…..

Peel and core the apples, and roughly chop them. Caramelize the sugar in a saucepan. The color should be amber. Deglaze with apple juice, add the chopped apples and the remaining ingredients, mix thoroughly, and simmer over very low heat until reduced to a puree. Strain through a not-too-fine sieve, removing the cloves. The puree retains a nicer color if you use cinnamon sticks instead of ground cinnamon. Lemon juice can also be used to adjust the sweetness/acidity ratio quite well.
