Christmas cake with speculatius

Ingredients for 1 servings:

  • 500 g mascarpone
  • 250 ml Cremefine for whipping
  • 3 cake bases, dark
  • 200 g spiced speculatius biscuits
  • 2 tsp speculatius spice
  • 200 g white chocolate
  • 100 ml cream
  • 75 g sugar
  • 1 packet of vanilla sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

Speculoos mascarpone cream with white chocolate

The day before, prepare the ganache for coating the cake layers. To do this, heat the cream on the stove and melt the white chocolate in it. Let it cool overnight in the refrigerator. For the cream: Whip the Cremfine until stiff and fold it into the mascarpone. Add the sugar and vanilla sugar and, if desired, add small pieces of speculatius biscuits. Mix everything until smooth and then season with the speculatius spice. Cover the first layer with ganache and spread 1/3 of the cream evenly over it. Place the next layer on top and repeat. Cover the top layer only with cream and spread the cream evenly all over the cake. Set the whole speculatius biscuits to the side and decorate the cake as desired.
