Ingredients for 1 servings:

  • 500 g flour
  • 1 tsp baking powder
  • 3 large eggs
  • 250 g sugar
  • 2 tsp cinnamon powder
  • 2 tsp clove powder
  • 2 tsp orange peel, grated
  • 2 tsp lemon zest, grated
  • 2 tbsp Amaretto
  • 50 g butter
  • 30 g clarified butter
  • 200 g walnuts

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

with walnuts and cinnamon – makes about 100 pieces

Mix the flour with the baking powder and sift into a bowl. Whisk the eggs. Add all ingredients except the nuts to the flour bowl. Knead thoroughly using the dough hook of a hand mixer. Then, on a floured surface, knead the dough with your hands until smooth, incorporating the walnuts as you go. Divide the dough into four equal portions and shape each into a log that still fits on the baking tray. Line a baking tray with baking paper, place the logs on the logs, and bake on the middle rack at 180°C (160°C fan-assisted oven) for about 45 minutes. After baking, let the logs rest for 5 minutes, then cut diagonally into approximately 2 cm thick slices.
