Christmas Cheesecake Snow Flurry
The perfect christmas cheesecake snow flurry recipe with a picture and simple step-by-step instructions.
For the ground:
- 300 g Speculoos biscuits
- 1 Egg
- 100 g Butter
- Flour for rolling
For the cheese mixture:
- 500 g Lowfat quark
- 500 g Cream curd
- 3 Clementines alternatively canned mandarins
- 1 P Vanilla pudding
- 150 g Sugar
- 1 P Vanilla sugar
- 1 half Squeezed lemon
- 3 tbsp Monin gingerbread syrup
- 5 Egg yolk
- 5 Protein
For the “snow”
- 10 Protein
- 2 P Vanilla sugar
For the decoration:
- 1 Marzipan paste
- 1 Powdered green food coloring
- 1 Powdered yellow food coloring
- Powdered sugar
- Cookie cutters: Christmas tree, star, boots
- 50 g Whole milk couverture
- Wooden skewers or similar

For the ground:
- Put the speculoos biscuits in a bag and break into small crumbs. Process the crumbs together with the egg and butter in the food processor to form a smooth dough. Shape into a ball and put in the fridge for about 20 minutes.
Clementines:
- In the meantime, remove the clementines from the skin, cut them up and set aside. I would like to note, however, that I will use the “mandarins” from the tin for my next cake, because when we tried the finished cake we all had the impression that the “fresh” clementines had somehow become bitter in taste from baking .
The cheese mass:
- Put the quark together with the egg yolks, sugar, vanilla sugar, pudding, squeezed lemon in the food processor and mix everything together. Then add the gingerbread syrup according to need and intensity. I mixed in 4 tablespoons. Beat the 5 egg whites separately and slowly mix them into the cheese mixture.
Making the floor:
- Roll out the speculoos dough on the floured work surface as far as possible. Rub the cake tin with butter and place the speculoos batter in pieces on the bottom of the tin and press down with your fingers. Then spread the clementines / mandarins on the floor. See pictures. Please make sure that the dough is only for the base, I did not form an edge.
Quark mass:
- Then pour the quark mixture over it and bake in the preheated oven at approx. 160 degrees for 50 minutes.
For the “snow”:
- Beat the 10 egg whites and gradually add 2 more sachets of vanilla sugar.
Making decoration:
- Divide the marzipan into approx. 3 parts. Color the first part green, the other yellow, the third part remains neutral. Melt 50 g whole milk couverture in a water bath. From the green that cut out the fir trees, from the yellow the star and from the neutral the boots. The boots are covered with a little milk couverture.
Completion of the cake:
- When the baking time is over, take the cheesecake out of the oven and cover generously with the egg whites and place in the oven again for about 15 minutes until the egg whites have a nice color. See photos. Then leave the cake in the oven for about 10 minutes, remove it and let it cool down a little. Press in the pine trees and the star on the back with wooden skewers that have been shortened in different lengths. Using a sieve, sprinkle the powdered sugar generously over it. Place the fir trees and star as you like. Coat the back of the boots with a little couverture and fasten around the edge of the cake.
