Christmas: Hearty Oat Cookies

- 250 g Butter
- 500 g Crunchy oatmeal
- 125 g Sugar brown
- 125 g Sugar
- 3 Eggs
- 50 g Wheat flour
- 1 tsp Baking powder
- 1 tbsp Coriander grains
- For the cookies, first roast the coriander in a pan or saucepan without fat until it smells fine. Then remove and grate finely in a mortar. Let the butter get boiling hot in the pan, add the crispy oat flakes and stir well. Let cool down.
- In the meantime, stir the sugar and eggs until frothy, add the flour and baking powder and stir in. Stir the cooled oat flakes and the coriander into the egg mixture and mix everything carefully.
- Use two teaspoons to put small heaps on a baking sheet, leave plenty of space, the cookies will spread apart. Preheat the oven to 175 ° C (convection) and bake the cookies for about 12-15 minutes. They should be golden yellow.
- Let the biscuits cool down on the paper (they break easily) and only pack them in well-closing cans after they have completely cooled down.
- In the original recipe, these cookies are made with normal sugar and without coriander, but that’s how they taste better for me, especially at Christmas time.
