Christmas Meringue Cake
The perfect christmas meringue cake recipe with a picture and simple step-by-step instructions.

- 6 Organic egg yolks
- 0,5 Vanilla pod scraped out
- 0,5 Organic lemon zest
- 150 g Flour
- 0,5 packet Baking powder
- 4 tbsp Milk

- 2 tsp Cinnamon
- 50 g Sugar

- Separate the eggs, scrape out the vanilla pod, rub off the lemon peel. Beat the egg yolks with sugar, vanilla pulp and lemon zest until a creamy mixture is formed. Sift the flour and baking powder. Add milk to the mixture and quickly stir in the flour and baking powder. Grease a springform pan and spread half of the dough in it.
- Preheat the oven to 175 ° C fan oven.
- Beat the egg whites with sugar and salt. Also put half of it in the springform pan. Scatter the almond flakes on top and bake for about 20 minutes until it is nice and light brown and crispy. Let cool on a wire rack. Do the same with the rest of the dough and meringue.

- Whip the cream, sugar and cinnamon until stiff. Brush a base with the cinnamon cream. I used the slightly thicker of the two floors for the bottom. Then put the other bottom on top.
