Christmas Morning Cranberry Muffins

Ingredients for 1 servings:

  • 1 ½ cup(s) cranberries
  • 45 g sugar
  • 240 g flour
  • 2 ½ tsp baking powder
  • 90 g sugar
  • ½ tsp baking soda
  • 1 tsp salt
  • ¾ tsp cinnamon
  • ½ tsp all-spice
  • 1 egg(s)
  • ½ tsp orange zest
  • 200 ml orange juice
  • 90 g butter or margarine, melted
  • 90 g nuts, chopped
  • Fat for the molds

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

for approx. 12 muffins

Roughly chop the cranberries, mix with the first portion of sugar (45 g), and set aside. Preheat the oven to 190°C (top/bottom heat). Grease muffin cups or line the cavities with paper baking cups. In a bowl, combine the flour, the second portion of sugar (90 g), baking powder, baking soda, salt, cinnamon, and allspice. In a second bowl, whisk the egg, then mix with the orange zest, orange juice, and melted butter. Add the dry mixture to the wet mixture and stir in. Then add the berries and nuts and stir in. Fill the muffin cups. Bake in a preheated oven for 15-20 minutes, until golden brown.
