- 75 g sugar
- 200 g butter, cold
- 1 egg yolk
- 1 pinch of salt
- 1 pinch of nutmeg, grated
- 1 pinch of cardamom, ground
- 1 pinch of ground cloves
- ½ tsp ground cinnamon
- 1 pkt. vanilla sugar, bourbon
- 150 g peanuts
- 50 g brown sugar
- 3 tbsp peanut butter from the jar
- 150 g powdered sugar
- 2 tbsp orange juice
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 55 minutes
Mix the flour, vanilla sugar, sugar, salt, and spices. Add the butter in small pieces and the egg yolk. Quickly knead everything into a smooth dough. Wrap the dough in foil and chill for about 1 hour. Preheat oven to 200°C (top and bottom heat). Finely chop the peanuts. Melt the brown sugar in a pan. Add the peanut butter and 100g of the chopped peanuts and mix. Let cool slightly. Divide the dough into 2 portions. Roll each portion out between sheets of cling film into a rectangle about 5mm thick. Carefully spread the peanut mixture onto one sheet of dough (it will be very firm). Place the second sheet of dough on top and cut this rectangle into 30 strips, each about 1cm wide. Carefully place the strips (preferably with a palette knife, etc.) on a baking sheet lined with baking paper. Bake in the preheated oven on the middle rack for about 10-12 minutes. For the glaze: Mix the powdered sugar with the orange juice until thick and glazed. Spread it over the cooled nut bars. Sprinkle with the remaining chopped nuts and let them dry.
