Christmas Red Cabbage

The perfect christmas red cabbage recipe with a picture and simple step-by-step instructions.

  • 1 head Red cabbage
  • 150 g Goose fat
  • 1 Onion
  • 1 Apple
  • 2 Glasses Mulled wine
  • 2 Tbsp. Vinegar
  • 0,5 Glass Applesauce
  • 10 Juniper berries
  • 5 Cloves
  • 6 Allspice grains
  • 2 Bay leaves
  • 2 Tbsp. Sugar
  • Salt
  • Pepper
  1. Cut the red cabbage into fine strips except for the stalk or slice them finely.
  2. Peel the onions and fry them in the melted lard until they are translucent, peel the apple, remove the core and also add to the onions, add the red cabbage and all the other ingredients except the applesauce.
  3. Deglaze the whole thing with mulled wine and simmer gently in a closed pot for approx. 90 minutes, stirring every now and then and topping up with water or mulled wine if necessary
  4. Add the apple puree, stir well and simmer for another 3 minutes.
  5. Let the red cabbage cool down and let it steep in the refrigerator for 1-2 days.
  6. I always make the red cabbage before Christmas and freeze it, firstly it tastes much better and secondly you don’t have that much work on Christmas Day.
