Ingredients for 20 servings:

  • 375 g flour
  • 125 g oat flakes (fine)
  • 1 tbsp baking powder
  • 175 g sugar
  • 1 tbsp vanilla sugar
  • some salt
  • 1 pinch of nutmeg (Macis – nutmeg blossom)
  • 1 pinch of cardamom
  • 2 tbsp rum, 2 eggs
  • 175 g butter
  • 250 g quark (low-fat quark)
  • 125 g currants
  • 250 g raisins
  • 150 g ground almonds
  • 100 g butter
  • 150 g icing sugar, for dusting

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Sift flour, oats, and baking powder onto a tabletop. Make a well in the center. Add the sugar, vanilla sugar, salt, bitter almond oil, rum, spices, and eggs and mix with part of the flour mixture. Then add the cold butter, cut into pieces, quark, currants, raisins, and almonds. Cover these ingredients with the remaining flour mixture and, starting in the center, knead into a smooth dough. Shape the dough into a stollen and place it on a baking sheet lined with baking paper in an oven preheated to 250 degrees Celsius. Bake for approximately 50-60 minutes at 160-180 degrees Celsius. Brush with softened butter and sprinkle with powdered sugar.
