Ingredients for 6 servings:
- 1 kg turkey breast fillet(s)
- ½ kg minced meat
- 1 large apple
- 200 g chestnuts
- 1 onion(s)
- 1 egg(s)
- 5 tbsp breadcrumbs
- 3 tsp celery salt
- 2 tsp pepper
- 1 tsp garlic granules
- 3 tsp herbs
- 2 tsp salt
- 250 ml orange juice
- 250 ml chicken stock
- 100 g butter
- some oil
- possibly sauce thickener

Chop the chestnuts, peel the apple, remove the core, and cut the flesh into small cubes. Wash the turkey breast fillet, pat dry, and slice into as large a slab as possible. If possible, do not cut through, but leave the outside intact. Season the inside with salt. For the filling, mix the minced meat with the egg, breadcrumbs, celery salt, pepper, garlic, and Italian herbs, then thoroughly mix in the chopped chestnuts, finely diced apple, and finely chopped onion. Spread this filling over the turkey and roll it up. Be careful! Don’t use too much filling; the roll should still close. Tie it tightly with kitchen string. Shape the leftover filling into small dumplings. Brown the turkey roll and dumplings on all sides in oil, then deglaze with orange juice and chicken broth. Sprinkle the meat with butter flakes and place everything in a roasting pan in a preheated oven at 180°C for 1.5-2 hours (I use a meat thermometer). Close the lid. If desired, thicken the broth to make a gravy, for example, with a gravy thickener.
