Ingredients for 4 servings:
- 2 tbsp oil (peanut oil)
- 1 onion(s), finely chopped
- 2 potatoes, raw, diced
- 1 pepper(s), red, finely chopped
- 1 small red chili pepper(s), dried, without seeds, finely crumbled
- 1 liter beef stock
- 4 tbsp peanuts, unsalted, roasted
- 2 tbsp coriander greens, chopped
- e.g. diced tomatoes
- 2 tbsp peanuts, roasted
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour
a delicious soup with a delicate peanut flavor
Heat the oil in a saucepan over medium heat. Sauté the onion, potato, and bell pepper for about 10 minutes, stirring vigorously, but do not allow to brown. Add the chilies and stock and bring to a boil. Then reduce the heat and simmer for 15 minutes. Purée half of the soup, add the ground peanuts, and return it to the pan with the remaining soup. Season with salt and pepper and garnish with chopped cilantro, tomato pieces, and peanuts.
