Ciabatta burger “Italian Style”

Ingredients for 2 servings:

  • 300 g minced meat, half and half
  • 1 garlic clove(s)
  • 1 tbsp capers
  • salt and pepper
  • oregano
  • 4 tomatoes, semi-dried
  • 1 handful of arugula
  • 20 g Parmesan
  • 2 ciabatta rolls
  • 4 tsp pesto, green
  • 1 tbsp olive oil
  • 2 slices of Italian ham, e.g. Parma ham

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

for people who don’t like soggy burger buns

Finely chop the garlic and capers. Place them in a bowl with the ground beef and season with salt, pepper, and oregano. Knead the beef mixture thoroughly with your hands and form into two patties the size of the buns. Cover with plastic wrap and let rest in the refrigerator for at least 30 minutes. Cut the semi-dried tomatoes into strips. Wash the arugula and spin dry. Coarsely grate the Parmesan cheese. Heat the buns in the oven until they are slightly crispy on the outside. This takes about 10 minutes. Then cut them open smoothly with a bread knife and spread each half with the pesto. Heat the olive oil in a pan over high heat, sear the burger patties on both sides for a few minutes, then continue to cook on a lower heat with the lid on until cooked through. This takes about 10 minutes, depending on the thickness of the patties. Finally, sprinkle the Parmesan cheese on top and let it melt. Now assemble the burgers as follows: place the patty with the Parmesan cheese on the bottom half of the bun, then the tomato strips, then a slice of ham, some arugula and finally the top half of the bun.
