Ingredients for 4 servings:

  • 390 g wheat flour type 550
  • 300 g water, cold
  • 10 g olive oil
  • 7 g salt
  • 6 g yeast, fresh
  • Flour for the work surface
  • Olive oil for greasing

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Combine the wheat flour, cold water, olive oil, and salt in a bowl. Rub the fresh yeast between your fingers over all the ingredients. Mix everything together with a spoon. Transfer to a lidded container oiled with olive oil. Cover. Fold after 30 minutes, and then again after 30 minutes. Cover and refrigerate for 12 hours or overnight. The next day, preheat the oven to 250°C (top/bottom heat). Carefully turn the dough out onto a floured work surface and slide it onto the work surface. Gently and carefully shape it. Cut off 6 equal pieces and place them on a baking sheet lined with baking paper. Place in the oven and steam. Bake for 12-15 minutes.
