Instructions

Working time approx. 40 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 40 minutes

with hazelnuts, makes about 30 small cinnamon stars

Cut the marzipan into small pieces and place in a bowl. Add the egg whites and knead both together well. You can of course do this with a mixer, but kneading by hand is still best. Add the powdered sugar, cinnamon, and hazelnuts and knead everything into a smooth dough. If the dough is quite sticky, simply add more grated hazelnuts, but not too much, as the dough should remain moist. Cover the dough and let it rest in a cool place for at least 3 minutes. For the icing, beat the egg whites until stiff peaks form. Put the powdered sugar in a bowl and carefully mix with the egg whites and lemon juice. There should be no lumps and the icing should be smooth. (You can also beat the egg whites together with the powdered sugar and add the lemon juice last.) Now knead the cinnamon star dough well and carefully roll it out with a rolling pin on a lightly floured surface to about 1 cm thick. Cut out stars using cookie cutters and place them on a well-greased or parchment-lined baking sheet. Brush on some of the icing. Place the baking sheet in the preheated oven and bake at 170°C (top/bottom heat) for 10-12 minutes. The icing should begin to brown slightly, then the cinnamon stars are ready. After baking, remove them from the oven and let them cool on the baking sheet. Store the stars in a container to keep them fresh for a long time. The marzipan keeps them moist for a long time.
