Ingredients for 4 servings:

  • 2 eggs, of which the egg white
  • 125 g sugar, fine (icing sugar)
  • 1 pinch of salt
  • ½ tsp cinnamon powder
  • 150 g almonds, ground or nuts
  • Wafers, small round

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Beat the egg whites until stiff peaks form. Beat the egg whites, sugar, and a pinch of salt until quite fluffy (20 minutes by hand, but who beats by hand these days anyway???). Stir in the cinnamon powder and ground almonds/nuts. Drop the mixture in heaps onto small round wafers. Bake at moderate heat (150°C, possibly on the lower setting) for about 30 minutes. It’s best to let the cookies sit for a few days so they can dry out properly!
