Clafouti with cherries

Ingredients for 1 servings:

  • 150 g sugar
  • 125 g flour
  • 4 eggs
  • 400 ml milk
  • 1 vanilla pod(s), scraped pulp (alternatively vanilla flavor)
  • 1 pinch of salt
  • 200 g yogurt
  • 450 g cherry(s), pitted
  • Butter for the mold
  • possibly breadcrumbs for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 190°C. Butter a pie or casserole dish and sprinkle with breadcrumbs, if desired. Place the cherries in the dish. Beat the eggs and sugar until frothy, then add the vanilla seeds. Add the salt, yogurt, and milk and stir in. Finally, stir in the flour. The batter should form a thin, runny batter. Pour this over the cherries. Bake in the hot oven for about 35 to 45 minutes. It’s best to test for doneness with a wooden skewer. The batter will rise a little but will likely shrink again as it cools, which doesn’t affect the flavor. It can be enjoyed lukewarm or at room temperature—or with ice cream. Tip: You can, of course, use other fruits of your choice.
