Omelette with vegetables and ham

Ingredients for 1 servings:

  • 1 egg(s), separated
  • 1 potato(s)
  • 4 tbsp milk
  • 1 tomato(s), diced
  • 100 g broccoli florets
  • 1 onion(s), diced
  • salt and pepper
  • nutmeg
  • oil
  • 50 g ham, diced

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Blanch the broccoli florets in salted water for 5 minutes. Beat the egg whites until stiff, finely grate the potatoes. Combine the potatoes, milk, egg yolks, and seasonings, and fold in the beaten egg whites. Add the oil to a pan and briefly fry the ham and onion. Spread the omelet mixture on top, add the tomato and broccoli florets, and gently press them into the mixture. When the underside is golden brown, flip the omelet and fry briefly until light brown on the other side.
