Ingredients for 4 servings:
- 500 g apples
- 150 g flour
- 2 eggs
- 40 g sugar
- 350 ml milk
- 1 tbsp Calvados
- 1 pinch of salt
- 1 pinch of cinnamon
- 1 packet of vanilla sugar
- 1 cup of natural yogurt
- 50 g butter
- Sugar for sprinkling

a classic French recipe for a clafoutis with apples
Combine all ingredients, except the apples and butter, and mix with a mixer until smooth and a not-too-liquid batter forms. Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit). Core and peel the apples, chop them into small pieces if desired, and add to the batter. Mix everything well. Generously butter a baking dish and pour in the batter. Bake for about 1 hour until it has turned a nice brown color. Remove from the oven, sprinkle with sugar, and let cool for 20 minutes. You can now serve the clafoutis either straight from the dish or, if you’re feeling adventurous, turn it out of the dish and then serve, which of course allows for more decoration variations. This goes perfectly with a good, chilled Cidre Bouché, a Crémant de Loire (Vouvray), or simply a glass of champagne. A word of caution to organic cooks: It’s best not to try this recipe with 100% whole-wheat flour! My wife had very bad experiences with it. However, it is easily possible to use up to a quarter of wholemeal flour.
