Peel the onions and slice into thin strips. Caramelize the sugar in a pan. Add the onion strips, sauté briefly, and deglaze with the balsamic vinegar. Simmer the onions for about 5 minutes, set aside, and let cool. Finely slice the chili pepper. Mix with mayonnaise, tomato paste, mustard, lime zest, lime juice, and a pinch of smoked salt. Slice the tomato. Wash and drain the lettuce leaves. Slice the gherkins. Season the ground beef with salt, pepper, and soy sauce and knead well. Form the ground beef into four patties. Heat the clarified butter in a suitable pan and cook the patties for 2-3 minutes on each side. Then top with cheddar cheese and fry until the cheese has melted. Fry the bacon in a non-stick pan without adding any oil until crispy. Top the bottom halves of each burger bun with burger sauce, lettuce, patty, tomatoes, pickles, bacon, caramelized onions, lettuce, and more burger sauce. Place the lids on top and serve.
