Ingredients for 2 servings:
- 2 m.-large mushrooms
- 1 small onion(s)
- ¼ bunch basil or 2 sprigs of thyme
- ¼ bunch parsley
- ¼ bunch chives
- 1 egg yolk, hard-boiled
- 2 tbsp breadcrumbs
- 2 tbsp oil
- 2 cod fillets
- Salt and pepper, from the mill
- 75 ml dry white wine
- Oil for greasing the mold
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes
Recipe for 2 people
Clean the mushrooms, peel the onion, wash the herbs, and shake dry. Rinse and dry the fish. Finely chop the mushrooms and onion. Reserve some parsley for garnish and finely chop the rest of the herbs. Preheat the oven to 225°C (top/bottom heat). Crush the egg yolk and mix with the mushrooms, shallots, breadcrumbs, herbs, and oil. Season the mixture with salt and pepper. Grease a baking dish, place the cod fillets in it, season with salt and pepper, and spread evenly with the herb mixture. Pour in the white wine and cook the fillets in the oven on the middle rack for about 12 minutes. Add a little more white wine, if desired, and season to taste. Serve the fish garnished with the parsley. Serve with boiled potatoes or baguette. Be careful with the seasoning!
