Classic Italian tomato sauce

Ingredients for 4 servings:

  • 2 peppers, hot, pickled
  • 4 tomatoes
  • 2 large onions
  • 100 ml olive oil
  • 150 g diced ham
  • 500 ml tomato(s), pureed
  • 5 cloves garlic
  • lots of basil
  • lots of oregano
  • some sea salt
  • some pepper
  • a little nutmeg

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely chop the onions and heat the olive oil (yes, really that much!) in a non-stick pan. Sauté the onions, diced ham, and finely chopped peppers over medium heat for about 10-15 minutes until translucent, stirring frequently. Chop the tomatoes into bite-sized pieces and add them along with the seasoning. Top with a packet of passata and simmer gently for 5 minutes, then remove from the heat. Add the garlic (using a garlic press!) just before serving and mix well. Fusilli al dente goes well with this. Important: The pasta shouldn’t be done before the sauce, or it will become too mushy!
