How to clean chicory properly

Chicory is related to radicchio and thus belongs to the chicory family. These slightly bitter-tasting varieties are particularly rich in vitamins. Chicory can not only be the main ingredient in many salads but can also be used in warm dishes.

  • First, remove the bottom stalk. Cut this off with a knife.
  • Take off all the leaves. Discard rotten and soft leaves.
  • Cut off the stalk again and again and loosen more leaves. Repeat the process as many times as necessary.
  • Then wash the leaves under water and pat them dry with a kitchen towel or use a salad spinner.
  • If you want to shred the leaves for a salad, cut them into fine strips.
  • For example, you can steam, grill, and even cook the chicory in the oven.

How to store the salad

The longer the chicory is kept in the refrigerator, the more the leaves can discolor. Therefore, the vegetables should be used up as quickly as possible.

  • Wrap the lettuce in a damp cloth and then place the vegetables in a plastic bag. A freezer bag is best for this. Chicory can be stored in the fridge for about a week.
  • You can also freeze the chicory. Blanch the leaves for two minutes and rinse them in cold water.
  • The leaves should then be dried with a kitchen towel.
  • Now put the leaves in a freezer bag. The leaves can be stored in the freezer for several months.
