Clear fish soup

Ingredients for 2 servings:

  • 400 g fish fillet(s), firm, e.g. cod
  • 400 ml fish stock from the jar
  • 100 ml water
  • 100 g carrot(s)
  • 50 g celeriac
  • 1 bay leaf
  • 1 garlic clove(s)
  • 1 spring onion(s)
  • some chili, freshly ground
  • 3 juniper berries
  • 20 g butter
  • some olive oil
  • some pepper
  • Sea salt
  • some parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Dice the root vegetables and garlic, slice the spring onions into rings, and sauté in a little olive oil and butter for about 10 minutes. Pour in the water, top up with the fish stock, and season. Dice the fish fillet and let it simmer in the stock for about 7 minutes.
