Clear sorrel soup

Ingredients for 4 servings:

  • 1 bunch sorrel
  • 2 potatoes
  • 1 m.-sized carrot(s)
  • 1 egg(s)
  • 100 g ham or smoked sausage
  • 1 liter vegetable broth
  • 4 tbsp sour cream
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the potatoes and carrots, cut into small pieces, and cook in the broth for about 15 minutes. Dice the ham or sausage and add them to the pot. Wash and chop the sorrel leaves, and add them to the boil. Beat the egg and add it to the soup. Season with salt and pepper. Ladle the soup into bowls, top with sour cream (one tablespoon per serving), and serve immediately.
