Ingredients for 3 servings:

  • 3 tbsp cream cheese
  • 3 eggs
  • ¼ tsp baking powder
  • 1 tsp cheese, grated
  • ½ tsp salt

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Separate the eggs. Place the egg yolks and egg whites in small bowls. Beat the egg whites with baking powder until stiff peaks form. Whisk the egg yolks with a little salt and the cream cheese until creamy. Then combine the contents of both bowls. Note: All ingredients (especially the cream cheese) should be at room temperature, so the flatbreads will rise better in the oven. Preheat the oven (electric) to 150-160°C. Then, using a tablespoon, place about 8-9 flatbreads on a baking sheet lined with baking paper and sprinkle with grated cheese, if desired. Bake for 15-20 minutes at 150°C and then serve with dips (e.g., aioli) and side dishes of your choice. Sprinkle with coarse (herb) salt, such as thyme salt, to taste. Without the cheese, a flatbread contains neither carbohydrates nor gluten. You can find “Cloud Bread” online as a sweet version with honey instead of salt.
