Coconut Banana Muffins

Ingredients for 12 servings:

  • 2 bananas, ripe
  • 240 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 90 g sugar
  • 50 ml oil (sunflower, vegetable, walnut oil)
  • 1 egg(s)
  • 150 ml coconut milk, from the can
  • 70 g desiccated coconut
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 190°C and grease a muffin tin thoroughly. Peel the banana and cut it into small cubes. In a bowl, combine the flour, baking powder, salt, and coconut flakes. In a second bowl, whisk the egg, add the oil, and milk, and mix well. Add the flour mixture and the banana pieces and gently fold in. Pour the mixture into the muffin tins and bake for approximately 20 to 25 minutes.
