  • 250 ml Sweet cream
  • 2 cups Flour
  • 2 cups Sugar
  • 4 Eggs
  • 1 tsp Baking powder
  • 1 bag Coconut flakes
  • 2 tbsp Milk
  • 125 gr Butter

Instructions

  • Mix the beaker of cream, flour, baking powder, eggs and a beaker of sugar for the dough with a mixer. Line a baking sheet with parchment paper and spread the batter on it. Preheat the oven to 180 degrees circulating air. Pre-bake the dough for about 15 to 20 minutes.
  • In the meantime, let the butter melt in a saucepan. Add the coconut flakes, the remaining sugar and the milk and simmer briefly. Spread the coconut mixture on the pre-baked dough and bake for another 15 minutes.
  • You can freeze the cake super. It tastes even better when pulled through!

I am a Registered Nutritionist-Dietitian. Shortly after taking and passing the licensure examination for Nutritionist-Dietitians, I pursued a Diploma in Culinary Arts, so I am also a certified chef. I decided to supplement my license with a study in the culinary arts because I believe that it will help me harness the best of my knowledge with real-world applications that can help people. These two passions form part and parcel of my professional life, and I am excited to work with any project that involves food, nutrition, fitness, and health.
