Coconut chia pudding

Ingredients for 4 servings:

  • 400 ml coconut milk
  • 6 tbsp chia seeds
  • 1 mango(s)
  • e.g. sweetener or stevia or similar.

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

with mango puree

Place 1.5 tablespoons of chia seeds into each of 4 dessert glasses or bowls. Sweeten the coconut milk to taste with sweetener, stevia, sugar, or similar, and pour 100 ml of it over the chia seeds. Stir well and let it swell in the refrigerator for at least an hour. Stir occasionally to ensure the chia seeds are evenly distributed. Meanwhile, peel, stone, and puree a ripe mango. If the mango isn’t sweet enough, add more sweetener. Finally, spread the mango puree evenly over the finished coconut pudding.
