Ingredients for 1 servings:

  • 3 egg whites
  • 1 pinch of salt
  • 150 g sugar
  • 1 tbsp vanilla sugar
  • ½ tsp ground ginger
  • 1 tsp lemon(s) – zest, grated
  • 1 tbsp lemon juice
  • 300 g desiccated coconut

Working time approx. 20 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 20 minutes

for those with a sweet tooth

Beat egg whites with salt until stiff peaks form. Slowly add the sugar and continue beating for about 5 minutes. Fold in the vanilla sugar, ginger, lemon zest and juice, and desiccated coconut. Using two teaspoons, scoop out small heaps of the coconut mixture and place them on a baking sheet lined with parchment paper. Let dry in a cool place for about 5 hours. Then, place in a preheated oven at 150°C for 20-25 minutes, drying rather than baking.
