Coconut Fish Soup

Ingredients for 4 servings:

  • 2 redfish fillets, diced
  • 3 cm ginger, finely chopped
  • 1 clove(s) garlic, finely chopped
  • 1 red chili pepper(s), cut into small rings
  • ½ liter chicken broth
  • 1 can of coconut milk (400ml)
  • 4 tbsp fish sauce
  • 3 tbsp lime juice
  • 1 tsp brown sugar
  • 1 tbsp oil, neutral
  • 4 tomatoes, quartered

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thai inspired

Mix the fish pieces with 2 tablespoons of fish sauce and set aside. Heat the oil in a saucepan. Sauté the ginger, chili pepper, and garlic. Add the chicken stock and coconut milk and heat gently. Be careful not to let it boil over! Add the fish sauce, lime juice, and sugar. Simmer for 5 minutes. Now add the tomatoes and fish, simmer for another 5 minutes, season to taste, and you’re done! This recipe serves 4 people as a starter or 2 as a main course.
